4 large eggs

1/4 cup milk

1/2 cup bell peppers (red, green, or yellow), finely chopped

1/4 cup spinach, chopped

1/4 cup cherry tomatoes, halved

1/4 cup onion, finely chopped

1/2 cup shredded cheese (cheddar or mozzarella)

Salt and pepper to taste

1 teaspoon olive oil (for greasing)

Fresh herbs (like chives or parsley) for garnish

Instructions
 

Preheat your oven to 350°F (175°C) and lightly grease a silicone or regular muffin tin with olive oil.

    In a large mixing bowl, whisk together the eggs and milk until well combined. Season with salt and pepper to taste.

      Add the chopped bell peppers, spinach, cherry tomatoes, onion, and half of the shredded cheese to the egg mixture. Stir gently to combine.

        Pour the egg and veggie mixture evenly into each muffin cup, filling them about 3/4 full.

          Sprinkle the remaining cheese on top of each filled muffin cup for an extra cheesy bite.

            Bake in the preheated oven for 15-20 minutes, or until the egg is set and the tops are lightly golden.

              Remove the bites from the oven and let them cool in the muffin tin for a few minutes before gently removing them to a plate.

                Garnish with freshly chopped herbs if desired before serving.
