1 pre-made pie crust (9-inch)

1 cup spinach, chopped

1 cup bell peppers, diced (mixed colors)

1/2 cup mushrooms, sliced

1/2 cup cherry tomatoes, halved

1 small onion, finely chopped

3 large eggs

1 cup milk (or plant-based milk)

1 cup shredded cheese (cheddar or mozzarella)

1 teaspoon garlic powder

1/2 teaspoon dried thyme

Salt and pepper to taste

Olive oil for sautéing

Preheat your oven to 375°F (190°C).

    Heat a tablespoon of olive oil in a skillet over medium heat. Add the chopped onion and sauté for about 3-4 minutes until translucent.

      Add the diced bell peppers and sliced mushrooms to the skillet, cooking for an additional 5 minutes. Then, stir in the chopped spinach and cherry tomatoes. Cook until the spinach is wilted, about 2 minutes. Remove from heat.

        In a large mixing bowl, whisk together the eggs, milk, garlic powder, dried thyme, salt, and pepper until fully combined.

          Spread the sautéed vegetable mixture evenly over the pie crust. Sprinkle the shredded cheese on top of the vegetables.

            Carefully pour the egg mixture over the vegetables and cheese, ensuring even coverage.

              Place the quiche in the preheated oven and bake for 35-40 minutes, or until the quiche is set in the center and lightly golden on top.

                Allow the quiche to cool for 5-10 minutes before slicing.
