1 lb ground turkey or beef

1 small onion, finely chopped

2 cloves garlic, minced

1 can (15 oz) black beans, drained and rinsed

1 can (10 oz) diced tomatoes with green chilies

1 packet taco seasoning

1 cup corn kernels (fresh, frozen, or canned)

1 cup sour cream

2 cups shredded cheddar cheese

8 small corn tortillas, cut into quarters

Fresh cilantro for garnish (optional)

Sliced jalapeños for garnish (optional)

Instructions
 

Preheat your oven to 375°F (190°C).

    In a large skillet over medium heat, add the ground turkey or beef. Cook until browned, breaking it apart with a spatula as it cooks (about 5-7 minutes).

      Add the chopped onion and minced garlic to the skillet, cooking until the onion is translucent (about 3-4 minutes).

        Stir in the black beans, diced tomatoes (with juices), taco seasoning, and corn. Mix well and let it simmer for 5 minutes.

          In a greased 9x13 inch baking dish, layer half of the corn tortilla quarters on the bottom. Spread half of the meat mixture over the tortillas, followed by half of the sour cream, and sprinkle with one cup of shredded cheddar cheese.

            Repeat the layering process with the remaining tortillas, meat mixture, sour cream, and top with the last cup of shredded cheese.

              Cover the casserole with aluminum foil and bake in the preheated oven for 20 minutes.

                After 20 minutes, remove the foil and bake for an additional 10-15 minutes until the cheese is bubbling and golden brown.

                  Let the casserole cool for a few minutes before serving.
