Ingredients

3 cups shredded hash browns (frozen or fresh)

1 cup shredded cheddar cheese

1/2 cup grated Parmesan cheese

1/4 cup unsalted butter, melted

4 large eggs

1 cup milk

1 cup kale, chopped

1/2 cup bell pepper, diced (red or green)

1/4 cup green onions, chopped

Salt and pepper to taste

Optional: Fresh herbs (like thyme or chives) for garnish

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C).

Prepare the Hash Brown Crust: In a mixing bowl, combine the shredded hash browns, melted butter, half of the cheddar cheese, salt, and pepper. Mix until well combined.

Form the Crust: Press the hash brown mixture evenly into the bottom and up the sides of a greased 9-inch pie dish or quiche pan to form a crust. Bake in the preheated oven for 20-25 minutes, or until the crust is golden brown and crispy.

Sauté the Vegetables: While the crust is baking, heat a skillet over medium heat. Add the chopped kale and diced bell pepper. Sauté for about 3-4 minutes or until the vegetables are tender. Remove from heat and let cool slightly.

Whisk the Eggs and Milk: In a large bowl, whisk together the eggs and milk. Stir in the remaining cheddar cheese, sautéed vegetables, and chopped green onions. Season with additional salt and pepper to taste.

Assemble the Quiche: Once the crust is done baking, remove it from the oven and pour the egg and vegetable mixture into the hash brown crust, spreading it evenly.

Bake the Quiche: Return the quiche to the oven and bake for an additional 25-30 minutes, or until the egg is set and the top is lightly golden.

Let it Cool: Remove the quiche from the oven, and allow it to cool for about 10 minutes before slicing. This helps it set up further and makes it easier to cut.

Serve: Garnish with fresh herbs if desired, and serve warm or at room temperature.

                    Prep Time: 15 mins | Total Time: 55 mins | Servings: 6

                      - Presentation Tips: Cut the quiche into wedges and serve with a side salad for a fresh and colorful meal. A small dollop of sour cream or a sprinkle of extra green onions on top can heighten the presentation!
