Instructions
In a large pot, heat the olive oil over medium heat.
Add the ground beef or turkey and cook until browned. Drain any excess fat.
Stir in the chopped onion and minced garlic, cooking for about 3-4 minutes until the onion is translucent.
Add the dried oregano, dried basil, and red pepper flakes (if using), stirring for another minute to let the spices bloom.
Pour in the crushed tomatoes and vegetable or chicken broth. Bring the mixture to a boil.
Once boiling, add the broken lasagna noodles. Reduce heat and let it simmer for about 15-20 minutes, or until the noodles are tender.
Stir in the ricotta cheese until well combined.
Add the shredded mozzarella and Parmesan cheese, stirring until melted and creamy.
Season with salt and pepper to taste.
Serve the soup hot, garnished with fresh basil or parsley for a touch of color and flavor.
