8 ounces penne pasta

1 pound ground beef (or turkey)

1 medium onion, diced

2 cloves garlic, minced

1 tablespoon olive oil

1 packet taco seasoning

1 can (15 ounces) diced tomatoes with green chilies, undrained

2 cups chicken or vegetable broth

1 cup shredded cheddar cheese

1 cup corn (fresh, frozen, or canned)

1 cup black beans (rinsed and drained)

Salt and pepper to taste

Fresh cilantro for garnish (optional)

Instructions
 

In a large skillet or frying pan, heat the olive oil over medium heat.

    Add the diced onion and minced garlic, sautéing until the onion is translucent, about 3-4 minutes.

      Add the ground beef (or turkey) to the skillet, breaking it apart with a spatula. Cook until browned, about 5-7 minutes. Drain excess grease if needed.

        Stir in the taco seasoning, mixing well to coat the meat.

          Pour in the diced tomatoes (with juices) and chicken broth. Bring to a gentle simmer.

            Add the penne pasta to the skillet, stirring to ensure the pasta is submerged in the liquid.

              Cover the skillet and cook for about 12-15 minutes, stirring occasionally, until the pasta is al dente and has absorbed some of the liquid.

                Once the pasta is cooked, stir in the corn and black beans until heated through.

                  Remove the skillet from heat and add the shredded cheddar cheese, stirring until melted and creamy.

                    Season with salt and pepper to taste.
