4 boneless, skinless chicken breasts

2 cups fresh mushrooms (cremini or button), sliced

1 medium onion, diced

3 cloves garlic, minced

1 cup chicken broth

1 tablespoon soy sauce (low sodium)

1 tablespoon olive oil

1 tablespoon butter

1 teaspoon dried thyme

1 teaspoon paprika

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Season the chicken breasts with salt, pepper, thyme, and paprika on both sides.

    In a large skillet, heat the olive oil over medium-high heat. Add the seasoned chicken breasts and cook for 5-7 minutes on each side until browned and cooked through. Remove from the skillet and set aside.

      In the same skillet, add the butter, then sauté the diced onion for about 2 minutes until translucent.

        Add the minced garlic and sliced mushrooms to the skillet, cooking for another 5-6 minutes until the mushrooms are tender and browned.

          Pour in the chicken broth and soy sauce, stirring to combine. Bring the mixture to a simmer, scraping any bits from the bottom of the skillet.

            Return the chicken to the skillet, nestling it into the mushroom sauce. Reduce the heat to low, cover, and let it simmer for another 5 minutes to allow the flavors to meld.

              Taste and adjust seasoning with salt and pepper if necessary.

                Serve the chicken warm, spooning mushroom sauce over the top and garnishing with fresh chopped parsley.
