2 boneless, skinless chicken breasts

8 oz fettuccine pasta

2 tablespoons olive oil

4 cloves garlic, minced

1 teaspoon Italian seasoning

1 cup sun-dried tomatoes, chopped

1 cup heavy cream

1 cup chicken broth

1 cup spinach leaves

1 cup grated Parmesan cheese

Salt and pepper to taste

Fresh basil, for garnish

Cook the Pasta: Bring a large pot of salted water to a boil. Add the fettuccine and cook according to package instructions until al dente. Drain and set aside, reserving 1 cup of pasta water.

    Prepare the Chicken: Season both sides of the chicken breasts with Italian seasoning, salt, and pepper.

      Sear the Chicken: In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Add the chicken breasts and cook for about 6-7 minutes on each side, or until cooked through and golden brown. Remove the chicken from the skillet and let it rest.

        Make the Sauce: In the same skillet, add the minced garlic and sauté for 1 minute until fragrant. Stir in the sun-dried tomatoes, and then pour in the chicken broth and heavy cream. Bring the mixture to a simmer.

          Thicken the Sauce: Reduce heat to low and add the spinach, allowing it to wilt. Gradually stir in the Parmesan cheese until melted and the sauce thickens. If the sauce is too thick, add reserved pasta water a little at a time until desired consistency is achieved.

            Combine Everything: Slice the cooked chicken into strips and return it to the skillet. Add the cooked fettuccine, tossing everything together to coat the pasta in the creamy sauce. Adjust seasoning with salt and pepper if needed.

              Serve: Plate the creamy chicken pasta, garnishing each serving with fresh basil for a vibrant touch.
