Ingredients

1 whole chicken (about 3-4 lbs), cut into pieces

2 cups buttermilk

4 bags of black tea

2 tablespoons lemon zest

1/4 cup fresh lemon juice

1 tablespoon garlic powder

1 tablespoon onion powder

1 teaspoon paprika

1 teaspoon cayenne pepper (optional, for heat)

Salt and pepper to taste

2 cups all-purpose flour

1 teaspoon baking powder

Vegetable oil for frying

Instructions

Marinate the Chicken: In a large bowl, heat 2 cups of water and steep the black tea bags for about 5 minutes. Remove the tea bags and let the tea cool. Mix in the buttermilk, lemon zest, lemon juice, garlic powder, onion powder, paprika, cayenne pepper, salt, and pepper. Add the chicken pieces to the buttermilk marinade, cover, and refrigerate for at least 4 hours or overnight for best flavor.

Prepare the Breading: In a separate bowl, combine the flour, baking powder, and a pinch of salt and pepper. Mix well to ensure even distribution.

Heat the Oil: In a large skillet or deep pot, heat about 2 inches of vegetable oil over medium-high heat until it reaches 350°F (175°C).

Coat the Chicken: Remove the chicken from the marinade, letting any excess liquid drip off. Dredge each piece in the flour mixture, ensuring they are fully coated. Tap off any excess flour.

Fry the Chicken: Working in batches, carefully add the coated chicken pieces to the hot oil. Fry for about 12-15 minutes per batch, turning occasionally, until golden brown and the internal temperature reaches 165°F (75°C).

Drain: Once cooked, remove the chicken from the oil and place it on a wire rack or paper towels to drain excess oil.

Serve: Serve the Lemon Tea Fried Chicken hot with lemon wedges and your favorite dipping sauce.
