Ingredients

8 oz spaghetti or fettuccine pasta

1 bunch of fresh asparagus, trimmed and cut into 2-inch pieces

3 tablespoons olive oil

2 cloves garlic, minced

Zest of 1 lemon

1/4 cup freshly squeezed lemon juice

1/2 cup grated Parmesan cheese, plus more for serving

Salt and black pepper to taste

1/4 teaspoon red pepper flakes (optional)

Fresh parsley, chopped, for garnish

Instructions

Cook the Pasta: In a large pot, bring salted water to a boil. Add pasta and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta and set aside.

Blanch the Asparagus: In the same pot, bring another pot of salted water to a boil. Add the asparagus pieces and blanch for about 2-3 minutes until bright green and slightly tender. Drain and immediately transfer to a bowl of ice water to stop the cooking. Drain and set aside.

Make the Sauce: In a large skillet over medium heat, add olive oil. Once hot, add minced garlic and cook for 30 seconds until fragrant, being careful not to burn it.

Combine Ingredients: Add the blanched asparagus to the skillet and sauté for about 2 minutes. Then, stir in the cooked pasta, lemon zest, lemon juice, and Parmesan cheese. Toss everything together, adding reserved pasta water a little at a time until you reach your desired creaminess.

Season: Season with salt, black pepper, and red pepper flakes (if using) to taste. Toss again to combine.

Serve: Plate the pasta in bowls, garnishing with additional Parmesan cheese and chopped parsley for a pop of color.
