Begin by seasoning the beef cubes with salt and pepper.
Turn your Instant Pot to the Sauté mode. Once hot, add sesame oil and let it heat for a minute.
Add the beef cubes in batches, browning them on all sides for about 3-4 minutes. Remove browned beef and set aside.
In the same pot, add minced garlic and grated ginger, sautéing for 30 seconds until fragrant.
Pour in the soy sauce, brown sugar, rice vinegar, and beef broth, stirring to combine.
Return the browned beef to the pot, ensuring it is submerged in the sauce.
Seal the lid on the Instant Pot and cook on Manual mode for 35 minutes.
Once cooking is complete, allow for a natural pressure release for about 10 minutes, then switch to quick release.
In a small bowl, whisk together cornstarch and cold water. Stir this mixture into the beef sauce in the pot, then switch to Sauté mode for an additional 3-5 minutes or until sauce thickens.
Serve the teriyaki beef hot over cooked rice or noodles, garnished with sliced green onions and sesame seeds.
Notes
Serve over rice or noodles for a complete meal.
