2 pounds boneless, skinless chicken thighs

1/2 cup honey

1/4 cup soy sauce (low sodium preferred)

4 cloves garlic, minced

1 tablespoon fresh ginger, grated

1 tablespoon cornstarch

2 tablespoons water

1 tablespoon sesame oil

1/2 teaspoon red pepper flakes (optional)

3 green onions, sliced (for garnish)

Sesame seeds (for garnish)

Instructions
 

Prepare the Sauce: In a bowl, whisk together honey, soy sauce, minced garlic, grated ginger, sesame oil, and red pepper flakes (if desired) until well combined.

    Sauté the Chicken: Turn on the Instant Pot and select the Sauté function. Add a little oil if needed, and brown the chicken thighs for 2-3 minutes on each side. You may need to do this in batches. Remove the chicken from the pot and set aside.

      Add the Sauce: Once the chicken is browned, cancel the sauté setting. Pour in the honey garlic sauce and stir well, scraping any browned bits off the bottom of the pot.

        Pressure Cook: Return the chicken thighs to the pot, ensuring they are submerged in the sauce. Close the lid and set the pressure valve to Sealing. Select the Manual or Pressure Cook setting and set the time for 10 minutes.

          Release Pressure: Once cooking is complete, allow the Instant Pot to naturally release pressure for 5 minutes, then do a quick release to let out any remaining steam. Open the lid carefully.

            Thicken the Sauce: In a small bowl, mix cornstarch and water to create a slurry. Select the Sauté function again, add the slurry to the pot, and stir continuously until the sauce thickens, about 2-3 minutes.

              Serve: Serve the honey garlic chicken over steamed rice or noodles. Drizzle with the thickened sauce and garnish with sliced green onions and sesame seeds.
