In a small bowl, whisk together honey, lemon juice, soy sauce, minced garlic, and olive oil until well combined. This will be your marinade/sauce.
Place the salmon fillets in a shallow dish and pour the marinade over the top, ensuring the fillets are well coated. Cover with plastic wrap and refrigerate for at least 30 minutes, allowing the flavors to soak in.
Preheat your oven to 400°F (200°C).
Once marinated, remove the salmon from the refrigerator and transfer the fillets to a baking dish, skin side down. Reserve some marinade for basting.
Season the salmon with salt and pepper to taste, then pour any remaining marinade over the top.
Bake in the preheated oven for about 12-15 minutes, or until the salmon flakes easily with a fork. Halfway through baking, baste the salmon with the reserved marinade for extra flavor.
Remove the salmon from the oven and let it rest for a couple of minutes.
Serve hot, garnished with lemon slices and chopped fresh parsley.
