Instructions
In a large mixing bowl, combine the shredded chicken, Greek yogurt, Dijon mustard, and honey. Mix well until the chicken is evenly coated.
Add the finely chopped celery, halved grapes, chopped walnuts, sliced green onions, and dried dill to the chicken mixture. Stir until all ingredients are well combined.
Season with salt and pepper to taste, adjusting to your preference.
Lay out each tortilla on a flat surface. Place a handful of fresh spinach or lettuce leaves in the center of each tortilla.
Spoon the Greek yogurt chicken salad mixture over the greens on each tortilla, spreading it evenly.
Fold the sides of the tortilla inwards, then roll it up tightly from the bottom to create a wrap.
Slice each wrap in half diagonally and serve immediately, or wrap in parchment paper for a portable meal.
Notes
Feel free to substitute walnuts with pecans if desired.
