Ingredients

2 large chicken breasts, sliced into thin strips

2 tablespoons olive oil

2 tablespoons lemon juice

2 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon ground cumin

Salt and pepper to taste

4 whole wheat pita breads

1 cucumber, grated

1 cup Greek yogurt

1 tablespoon fresh dill, chopped

1 tablespoon lemon juice (for tzatziki)

1 clove garlic, minced (for tzatziki)

Sliced tomatoes (for garnish)

Sliced red onion (for garnish)

Fresh parsley or mint (for garnish)

Instructions

Marinate the Chicken: In a bowl, combine olive oil, lemon juice, minced garlic, oregano, cumin, salt, and pepper. Add the sliced chicken and toss to coat evenly. Cover and let marinate in the refrigerator for at least 30 minutes, preferably up to 2 hours.

Prepare the Tzatziki: While the chicken marinates, prepare the tzatziki. In a bowl, mix the grated cucumber (squeezed to remove excess water), Greek yogurt, fresh dill, lemon juice, minced garlic, and a pinch of salt. Stir well and refrigerate until serving.

Cook the Chicken: Heat a large skillet over medium-high heat. Add the marinated chicken strips in a single layer and cook for about 5-7 minutes or until cooked through and slightly crispy, stirring occasionally.

Warm the Pita: While the chicken is cooking, warm the pita breads in a dry skillet or in the oven for a couple of minutes until soft and pliable.

Assemble the Gyros: On each warmed pita, layer cooked chicken strips, sliced tomatoes, sliced red onions, and a generous dollop of tzatziki.

Garnish: Finish with fresh parsley or mint on top for added flavor.

              - Presentation Tips: Roll the gyro tightly and wrap it in a piece of parchment paper for a street food feel, or serve open-faced on a plate with extra tzatziki and garnishes on the side.
