In a small bowl, combine the soy sauce, grated ginger, and minced garlic. Marinate the beef slices in this mixture for at least 15 minutes.
In a large pot, heat the vegetable oil over medium-high heat. Add the marinated beef and cook for about 3-4 minutes until browned. Remove the beef and set it aside.
In the same pot, add the beef broth and bring it to a gentle simmer.
Add the ramen noodles to the broth and cook according to the package instructions, usually around 4-5 minutes.
During the last minute of cooking the noodles, add in the chopped bok choy and the cooked beef to the pot. Stir gently to combine.
Once cooked, stir in the sesame oil and season with salt and pepper to taste.
Carefully ladle the ramen into bowls, ensuring an even distribution of noodles, broth, beef, and vegetables.
For added flavor, top each bowl with sliced green onions and a half of boiled egg if desired.
