6 large eggs

3 tablespoons mayonnaise

1 teaspoon Dijon mustard

1 teaspoon vinegar (white or apple cider)

Salt and pepper to taste

Black olives, sliced (for eyes)

Fresh chives, cut into small pieces (for beaks)

Paprika (for garnish)

Instructions
 

Start by boiling the eggs: Place the eggs in a saucepan and cover them with cold water. Bring the water to a boil over medium heat. Once boiling, cover the pan, remove it from heat, and let the eggs sit for 10-12 minutes.

    After the designated time, transfer the eggs to a bowl of ice water to cool them down quickly. Once cool, peel the eggs under cool running water for easier peeling.

      Slice each egg in half lengthwise and carefully scoop out the yolks into a mixing bowl. Place the egg whites on a serving platter, cut side up.

        Mash the yolks with a fork, then add the mayonnaise, Dijon mustard, vinegar, salt, and pepper. Mix until well combined and creamy.

          Using a piping bag or a zip-top bag with a corner snipped off, fill each egg white half with the yolk mixture.

            To create the chick look, take a small spoon or frosting tool to create little peaks in the filling, resembling feathers.

              Slice the black olives in half and place them on the egg yolk filling for eyes. Then, cut small triangles of chives to create little beaks under the olives.

                Finally, sprinkle a little paprika on top of each chick for a pop of color.
