4 bone-in pork chops (about 1 inch thick)

Salt and black pepper, to taste

1 teaspoon garlic powder

1 teaspoon paprika

2 tablespoons olive oil

1 medium onion, thinly sliced

2 cloves garlic, minced

1 cup chicken broth

1 cup heavy cream

1 tablespoon Dijon mustard

1 teaspoon dried thyme

1 tablespoon chopped fresh parsley (for garnish)

Instructions
 

Prepare the Pork Chops: Season both sides of the pork chops with salt, black pepper, garlic powder, and paprika.

    Sear the Pork Chops: In a large skillet, heat the olive oil over medium-high heat. Add the pork chops and sear on each side for about 4-5 minutes until golden brown. Remove from the skillet and set aside.

      Sauté the Aromatics: In the same skillet, add the sliced onion and sauté for 3-4 minutes until translucent. Then add minced garlic and sauté for an additional 1 minute until fragrant.

        Create the Sauce: Pour in the chicken broth, scraping up any browned bits from the bottom of the skillet. Let it simmer for 2-3 minutes. Stir in the heavy cream, Dijon mustard, and dried thyme. Mix well.

          Return the Pork Chops: Place the seared pork chops back into the skillet, spooning some of the sauce over them. Reduce the heat to low, cover the skillet, and let simmer for 15-20 minutes until the chops are cooked through (internal temperature should reach 145°F or 63°C).

            Finish and Serve: Remove the skillet from heat. Let it rest for a few minutes. Garnish with fresh parsley before serving.
