2 lbs boneless, skinless chicken breasts

1 can (14.5 oz) diced tomatoes with green chilies

1 can (15 oz) black beans, rinsed and drained

1 cup corn kernels (fresh, frozen, or canned)

1 medium onion, diced

3 cloves garlic, minced

1 tablespoon taco seasoning

1 teaspoon cumin

½ teaspoon chili powder

Salt and pepper to taste

1 lime, juiced

Fresh cilantro, for garnish

Instructions
 

Place the chicken breasts at the bottom of the crockpot.

    In a mixing bowl, combine the diced tomatoes, black beans, corn, onion, garlic, taco seasoning, cumin, chili powder, and lime juice. Stir well to combine.

      Pour the vegetable mixture over the chicken in the crockpot, ensuring the chicken is well coated.

        Season with salt and pepper to taste.

          Cover the crockpot and cook on low for 6-8 hours or high for 3-4 hours, until the chicken is tender and fully cooked.

            Once cooked, shred the chicken using two forks while it's still in the crockpot and mix it back with the sauce.

              Taste and adjust seasoning if necessary.

                Serve warm, garnished with fresh cilantro on top.
