2 large chicken breasts

4 slices of ham (preferably black forest or prosciutto)

4 slices of Swiss cheese

1 cup all-purpose flour

2 eggs, beaten

1 cup breadcrumbs (preferably panko for extra crunch)

1 teaspoon garlic powder

1 teaspoon paprika

1 teaspoon dried thyme

Salt and pepper to taste

1/4 cup cream cheese, softened

1 tablespoon Dijon mustard

2 tablespoons fresh parsley, chopped (for garnish)

Cooking oil for frying

Instructions
 

Preheat the oven to 400°F (200°C).

    Place each chicken breast between two pieces of plastic wrap or parchment paper. Use a meat mallet or rolling pin to pound the chicken to about 1/2 inch thick for even cooking.

      Season the pounded chicken breasts with salt, pepper, garlic powder, paprika, and thyme.

        In a small bowl, mix the softened cream cheese and Dijon mustard until smooth. Spread a layer of this mixture on each chicken breast.

          Place 2 slices of ham and 2 slices of Swiss cheese on top of the cream cheese mixture for each chicken breast.

            Roll each chicken breast tightly, starting from the narrower edge, to form a secure log. Use toothpicks to secure the ends if necessary.

              Setup a breading station: in one bowl, place flour; in the second bowl, the beaten eggs; and in the third bowl, the breadcrumbs.

                Dredge each chicken roll in flour, coating it evenly, then dip in the egg, and finally coat thoroughly with breadcrumbs.

                  In a large skillet, heat about 1/4 inch of cooking oil over medium heat. Once the oil is hot, carefully place the chicken rolls seam-side down in the oil. Cook for about 3-4 minutes on each side until golden brown.

                    Once golden, transfer the chicken rolls to a baking dish and place in the preheated oven. Bake for an additional 15-20 minutes until the chicken is fully cooked (165°F internal temperature) and the cheese is melty.

                      Remove toothpicks before serving. Garnish with chopped parsley.
