12 oz rigatoni pasta

1 lb Italian sausage (bulk or casings removed)

1 medium onion, diced

3 cloves garlic, minced

1 red bell pepper, diced

1 cup heavy cream

1 cup chicken broth

1 cup grated Parmesan cheese

2 tablespoons olive oil

1 teaspoon dried oregano

½ teaspoon red pepper flakes (adjust for spice preference)

Salt and pepper to taste

Fresh basil leaves for garnish

Cook the Pasta: In a large pot of salted boiling water, cook the rigatoni according to package directions until al dente. Drain and set aside, reserving ½ cup of the pasta water.

    Cook the Sausage: In a large skillet over medium heat, heat the olive oil. Add the Italian sausage and cook, breaking it up with a spatula, until browned and cooked through (about 5-7 minutes).

      Add Vegetables: Add the diced onion and red bell pepper to the skillet and sauté for about 4-5 minutes, until the onion is translucent. Stir in the minced garlic and cook for an additional minute until fragrant.

        Make the Sauce: Pour in the chicken broth and bring to a simmer. Stir in the heavy cream and Parmesan cheese, mixing until combined. Add the dried oregano, red pepper flakes, and season with salt and pepper to taste.

          Combine Pasta and Sauce: Add the cooked rigatoni to the skillet and toss to combine with the sauce. If the sauce is too thick, add a bit of the reserved pasta water to reach your desired consistency.
