Ingredients

4 cups fresh corn kernels (about 6-8 ears of corn)

1 cup heavy cream

1/2 cup whole milk

1 tablespoon unsalted butter

2 tablespoons sugar

1 teaspoon salt

1/2 teaspoon black pepper

1/4 teaspoon smoked paprika

1/4 teaspoon garlic powder

1/4 cup finely chopped fresh chives (for garnish)

Instructions

Start by peeling the corn and removing the kernels from the cobs. You can do this by standing the cob upright in a large bowl and using a sharp knife to cut downwards, removing the kernels in strips.

In a large pot, melt the butter over medium heat. Add the corn kernels to the pot and sauté for about 5 minutes, stirring occasionally, until they become tender and start to caramelize slightly.

Pour in the heavy cream and whole milk, then add the sugar, salt, black pepper, smoked paprika, and garlic powder. Stir well to combine all ingredients.

Reduce the heat to low and let the mixture simmer for about 15-20 minutes, stirring occasionally. The mixture should thicken slightly and become creamy.

Taste and adjust seasoning if necessary. If you prefer a silkier texture, you can use an immersion blender to blend a portion of the corn mixture, then stir it back in for added creaminess.

Once done, remove from heat, and let it cool slightly before serving.

              Prep Time: 15 minutes | Total Time: 35 minutes | Servings: 6
