In a large mixing bowl, combine the rolled oats, chopped dried cranberries, almond slices, and salt. Mix well to distribute the dry ingredients evenly.
In a separate bowl, combine the almond butter, honey (or maple syrup), vanilla extract, and cinnamon. Stir until the mixture is smooth and well combined.
Pour the wet mixture over the dry ingredients and mix everything together. Use your hands if necessary to ensure all the oats and cranberries are evenly coated.
Once everything is well combined, use your hands to form the mixture into small balls (about 1 inch in diameter). If the mixture is too sticky, dampen your hands slightly to make rolling easier.
Place the energy bites on a baking sheet lined with parchment paper and refrigerate for at least 30 minutes to firm up.
Once set, transfer the energy bites to an airtight container. They can be stored in the refrigerator for up to a week or frozen for longer storage.
