Preheat your oven to 350°F (175°C). Spread the raw almonds evenly on a baking sheet.
Roast the almonds in the preheated oven for about 10-12 minutes, stirring halfway through, until they are golden and fragrant. This step enhances the flavor.
Remove almonds from the oven and let them cool for a few minutes.
Transfer the slightly cooled almonds to a food processor. Blend on high speed for about 10-12 minutes, stopping occasionally to scrape down the sides. First, the almonds will turn into a meal, then a paste, and finally smooth almond butter.
Once creamy, add the maple syrup, ground cinnamon, and salt. For an extra smooth texture, add the coconut oil if desired.
Blend again until all ingredients are fully combined and the mixture is smooth and creamy. Adjust sweetness or cinnamon to taste.
Transfer the almond butter to an airtight jar and let it cool completely at room temperature.
