In a bowl, whisk together the lime juice, olive oil, honey, minced garlic, chili powder, cumin, paprika, salt, black pepper, and lime zest until well combined.
Place the chicken breasts in a resealable plastic bag or a shallow dish. Pour the marinade over the chicken, making sure it’s evenly coated.
Seal the bag or cover the dish, and refrigerate for at least 30 minutes, or ideally for 2 hours to allow the flavors to meld.
Preheat your grill to medium-high heat.
Remove the chicken from the marinade, letting excess drip off. Discard the remaining marinade.
Grill the chicken for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C) and the chicken is nicely charred.
Remove the chicken from the grill and let it rest for 5 minutes before slicing.
Garnish with freshly chopped cilantro and serve with lime wedges on the side.
Notes
For best flavor, marinate the chicken for at least 2 hours.
