2 cups cooked chicken, shredded

1 cup ricotta cheese

1 cup mozzarella cheese, shredded

1/2 cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon Italian seasoning

Salt and pepper to taste

1 package of puff pastry (2 sheets)

1 egg, beaten (for egg wash)

1 cup marinara sauce, for serving

Fresh basil leaves, for garnish

Instructions
 

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

    In a mixing bowl, combine the shredded cooked chicken, ricotta cheese, half of the mozzarella cheese, grated Parmesan cheese, garlic powder, Italian seasoning, salt, and pepper. Mix well until fully combined.

      Roll out the puff pastry sheets on a lightly floured surface. Cut each sheet into squares, roughly 4x4 inches in size.

        Spoon a generous amount of the chicken mixture onto the center of each puff pastry square. Be careful not to overfill.

          Fold the corners of the square over the filling to create a pillow shape. Press the edges firmly to seal and use a fork to crimp the edges for an extra secure seal.

            Place the filled pillows on the prepared baking sheet. Brush the tops with the beaten egg to give them a golden color when baked.

              Sprinkle the remaining mozzarella cheese on top of each pillow.

                Bake in the preheated oven for 20-25 minutes, or until the pastry is puffed and golden brown.

                  Once baked, remove from the oven and let them cool slightly.

                    Serve warm with a side of marinara sauce for dipping and garnish with fresh basil leaves.
