8 oz bowtie pasta

1 lb ground beef

1 small onion, finely chopped

2 cloves garlic, minced

1 can (14.5 oz) diced tomatoes with green chilies

1 cup beef broth

1 tsp Italian seasoning

2 cups shredded cheddar cheese

1 cup heavy cream

2 tablespoons olive oil

Salt and pepper to taste

Fresh parsley for garnish (optional)

Cook the Pasta: In a large pot of boiling salted water, cook the bowtie pasta according to package instructions until al dente. Drain and set aside.

    Brown the Beef: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes. Add the minced garlic and cook for another minute until fragrant.

      Add the Beef: Add the ground beef to the skillet, breaking it up with a spatula. Cook until browned and fully cooked through, about 5-7 minutes. Drain any excess fat.

        Add Tomatoes and Broth: Stir in the diced tomatoes (with juices), beef broth, and Italian seasoning. Bring to a simmer, letting it cook for about 5 minutes to combine the flavors.

          Make it Creamy: Lower the heat and slowly stir in the heavy cream, mixing until everything is well combined and creamy. Season with salt and pepper to taste.

            Combine Pasta and Cheese: Add the cooked bowtie pasta to the skillet, tossing to coat the pasta in the creamy beef mixture. Gradually add the shredded cheddar cheese, mixing until melted and uniformly distributed.

              Serve: Remove from heat and let rest for a couple of minutes to thicken slightly.
