6 pork sausages (or your choice of plant-based sausages)

4 large russet potatoes, peeled and cubed

1/2 cup heavy cream (or coconut cream for a dairy-free option)

1/4 cup unsalted butter (or olive oil)

1/2 cup roasted garlic cloves (approx. 1 whole garlic bulb)

Salt and pepper to taste

1 tablespoon Dijon mustard

2 tablespoons fresh parsley, chopped

1 tablespoon olive oil

1/2 cup vegetable broth

Prepare the Garlic: Preheat the oven to 400°F (200°C). Wrap the whole garlic bulb in aluminum foil and roast for about 30-35 minutes until soft and fragrant. Let cool, then squeeze the garlic cloves out of their skins.

    Boil the Potatoes: In a large pot, add the cubed russet potatoes and cover with cold water. Add a pinch of salt and bring to a boil. Cook for about 15-20 minutes, or until the potatoes are fork-tender.

      Cook the Sausages: In a skillet, heat the olive oil over medium heat. Add the sausages and cook for about 12-15 minutes, turning occasionally until they are browned and cooked through. Remove from the heat and keep them warm.

        Make the Mashed Potatoes: Drain the boiled potatoes and return them to the pot. Add the roasted garlic cloves, butter, and heavy cream. Mash until smooth, adjusting the cream for your desired consistency. Stir in the Dijon mustard, and season with salt and pepper to taste.

          Create the Gravy: In the same skillet used for the sausages, pour in the vegetable broth and bring to a simmer, scraping up any browned bits from the pan. Cook for about 5 minutes until slightly thickened. If desired, you can add a cornstarch slurry for thicker gravy.

            Combine and Serve: Plate a generous scoop of the creamy garlic mashed potatoes, place the sausages on top, and drizzle the savory gravy over everything. Garnish with fresh chopped parsley.
