In a large mixing bowl, combine the rolled oats and shredded coconut. Mix well to ensure they are evenly distributed.
In a separate bowl, mix together the almond butter, honey or maple syrup, vanilla extract, and sea salt until smooth and creamy.
Pour the almond butter mixture into the oats and coconut mixture, then add the dark chocolate chips and chopped almonds.
Using your hands or a spatula, mix everything together until well combined. The mixture should be sticky and hold together when pressed.
Once combined, scoop out tablespoon-sized portions, and roll them into balls. You should have around 12-15 energy balls.
Place the formed energy balls on a parchment-lined baking sheet or plate.
Refrigerate for at least 30 minutes to help them set and firm up.
Notes
Serve these energy balls in a clear glass jar or arranged neatly on a platter. Garnish with a sprinkle of shredded coconut on top for an extra tropical touch!
